      Recipes From the Old Cupboards

       "A recipe has no soul. You as the cook, must bring soul to the recipe."

       Easy and yummy recipe for a delicious spread in a jar.  If you are on your path to preserving your own produce of vegetables, here a traditional recipe that will enrich your food pantry shelves:

      INGREDIENTS:

      • tomatoes - 3 kg
      • peppers - 2 kg red
      • carrots - 600 g
      • eggplant - 1 kg
      • onion - 2 - 3 onions
      • garlic - 3 - 4 cloves
      • vinegar - 1/3 tsp.
      • sugar - 1 tsp.
      • oil – 2 tsp.
      • salt - to taste / about 3 large tablespoons /
      • black pepper - to taste / ground /
      • smoked red pepper - 1 tbsp.
      • handful of parsley

      METHOD OF PREPARATION

      Peel an eggplant, cut it into pieces, salt it and put it to stand to remove the bitterness.

       During this time, the remaining vegetables are prepared. The peppers are peeled, cleaned of seeds and also cut into pieces.

       The tomatoes and the carrots are also cut into large pieces. All vegetables are mixed and poured into a large pan. 

      Drizzle with oil, vinegar, sprinkle with salt and sugar. Bake for three hours in a moderate oven, stirring occasionally. At the end of baking, add the red smoked pepper. 

      After the vegetables are cooked, leave them to cool for about 10 minutes and season with the black pepper and the chopped parsley. Mash with a blender to the desired consistency. Fill into jars and sterilize for 10 minutes in boiling water 

      If you haven`t tried this yet, now is the time to be bold and try it! If you are a lover of a vegetarian/vegan food, you will be pleased that you made it!

      Enjoy the active “making my food at home “time and don’t forget to store the jars in a cool dry place (on the shelves in your pantry room) they can last up to 2 years, which I doubt if you have a good family and friends over for dinner often😊
